Desserts can be termed as concluding and sought after part of a good complete meal. There is huge range of varieties in desserts. Ice-creams, cakes, pastries, cookies, pies, pudding, candies, biscuits, gelatos are few of them. Fruits are also considered as a dessert as they are natural sweeteners. People are bending towards natural flavors, so they are going for dishes like fruit salad or milkshakes. Ice-cream outlets are selling natural flavored ice creams or a dish with a combination of different fruit pieces served with whipped cream. The increased demand of dish with fruits has forced the owners to look for whipped cream machine, as making cream airy is time consuming and requires lot of energy.

People are also looking for new variety of foods including desserts. The new entry into the market in this regard is gelato. Gelato is an Italian style ice-cream. ‘Gelato’ is an Italian origin word which means ice-cream. Milk, sugar and eggs with a desired flavor are added into a commercial gelato machine. The mixture obtained from the machine is less in fat compared to other ice-creams.
Gelato typically has more flavors and less air than any other frozen dessert. This sweet dish has a rich density which distinguishes it from other ice-creams. Gelato is served either in a cup, cone, sandwich, cake pie or as a part of sundae. The traditional flavors include vanilla, chocolate, pistachio, cream and stracciatella. Modern flavors like raspberry, mango, strawberry and other fruity flavors have also made their way into the market.
The typical process of making a gelato is mixing of milk, eggs, sugar and flavor and heating the mixture and cooling it. The blend is then batched (a process which incorporates air into gelato giving it a distinctive texture). The sugar in the mixture prevents forming of natural crystals when cooled, thereby giving it a smooth texture.
